Every Saturday until June 29, 2024, AC Hotel Melbourne Southbank joins forces with the acclaimed Australian gin distillery Patient Wolf Gin to bring diners a tantalizing experience of bottomless G&Ts paired with authentic tapas, all for $105 per person.

The collaboration features Sorolla’s chef, Ryan Flaherty, crafting an array of exquisite tapas that perfectly complement the nuanced and stylish offerings of Patient Wolf Gin (admittedly one of our favorite distilleries).

The ACGT, featuring Melbourne Dry Gin, is a bright and invigorating mix of ruby grapefruit and fresh juniper, delicately balanced with the subtle spices of aniseed myrtle, cubeb pepper, and tonka beans. It’s bold, complex, and aromatic—a true testament to Patient Wolf’s craftsmanship.

For those seeking a more refreshing profile, the Summer Thyme G&T is a lively concoction bursting with lemon zest and a delicate piney freshness. With a vibrant green hue and a solid juniper backbone, it evokes the essence of summertime in every sip.

Then there’s the Pinot Noir G&T, a unique and distinctive gin that emerges from Patient Wolf Melbourne Dry Gin steeped in 6ft6 Pinot Noir grapes. After three months, the gin-soaked fruit is lightly pressed and strained, resulting in a gin that’s as bright in color as it is in flavor—a harmonious blend that’s both innovative and deeply satisfying.
