The prized Executive Chef, Ryan Spurrell, brings Michelin-star credentials, and a series of fun showstopper dishes to the table. Ryan describes the food as “not so much fusion, but a cuisine without borders", a dynamic we experienced during our visit.

Puffed pork skin, Sour apple dip, Prickly ash was a visually striking, moorish dish that has fast become a signature. The sour apple dip added a bright, zesty contrast, while the prickly ash powder was a brilliant seasoning.

Fremantle octopus beignet with Katsuobushi and Bulldog sauce was delicious presented in croquette style, with a delightful balance from the classic sauce and dancing Katsuobushi flakes.

Charred Kangaroo Tartare with welcome crunch of rice crackers, Togarshi and Charcoal dressing showcased indigenous ingredients at their best. A modern kangaroo dish.

The Heirloom Beetroot with goat’s curd and mandarin purée served as a refreshing palate cleanser – its mandarin punch was both subtle and satisfying, perfectly bridging the snacks and mains.

Pan-fried Trumpeter with Nduja XO clams, turnips, and lemongrass broth was buttery, tender, and deeply flavorful – a triumph of depth and finesse.

Pad Kra Pao omelette with pork belly and chilli caramel is a “chef’s chef” dish, with a light, perfect omelette, crispy pork belly and bold Asian flavours.

Miso braised mushrooms, a celebration of Mornington Peninsula’s finest, were rich, earthy, and deeply comforting. One of the best dishes of the night, with egg and puree at the bottom of the bowl.

The ½ Free-range Hazeldene chicken with Hainan glaze was a flavor-packed marvel, complemented by fragrant rice and wok-tossed greens.

To finish, the Egg brulée with white chocolate, macadamia, and coffee was simply superb, enjoyed with a glass of Chardonnay.
